We Went for the Watermelon Mimosas
“Katie’s Pizza and Pasta” has become a staple to the St. Louis vocabulary. Award winning husband and wife team Ted & Katie Collier bring the ‘Lou a modern, local twist on pizza, pasta and … brunch? Yes, we said it! How we landed at Katie’s for brunch: the weekend of bottomless watermelon mimosas advertised on Instagram. (Thank goodness for social media, am I right!?!?)
Taking a weekend to replace the usual bottomless blood orange mimosa, Katie’s remains true to their promise to use local, seasonal ingredients by getting their watermelon from Sunfarms in Old North St. Louis. What a fun, fresh way to bring the taste of summer to brunch! The mimosas were so refreshing and perfect for these St. Louis summer days. This drink is light, airy and pretty to boot. So fun, so different. Katie, we love the watermelon mimosa!

I decided to pair my brunchy bev with another indulgence – the lemon ricotta pancakes. OMG. If you haven’t tried these yet, you are missing out! Let me just say THANK YOU CHEF KATIE! The stack of thin, fluffy pancakes separated with ricotta cheese came topped with lemon curd, fresh raspberries, and of course syrup. Every part of this dish tasted oh-so fresh. The lemon curd was a perfect ratio of zest to sweet, not leaving a tart or bitter taste in your mouth. The same can be said for the raspberries! And, the syrup was a perfect compliment, not taking away from the other flavors in this dish. Perfection!!!
